Cauliflower Margherita Pizza

1 bag Birds Eye® Veggie Made Riced Cauliflower, cooked according to package directions, drain off any excess liquid

2 eggs

1 cup shredded mozzarella cheese, divided

2 Tbsp. grated parmesan cheese, divided

1/8 tsp. black pepper

¼ cup marinara sauce

1 tomato, thinly sliced

2 Tbsp. thinly sliced basil leaves


  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In medium bowl combine cooked cauliflower, eggs, ¾ cups mozzarella cheese, 1 tablespoon parmesan and black pepper. Spread cauliflower mixture onto prepared baking sheet forming an 11 x 6-inch rectangle.
  3. Bake 20 minutes or until golden brown. Spread with marinara sauce and top with tomatoes and remaining cheeses. Bake 10 minutes or until cheese is melted. Sprinkle with basil.
