Chickpea, Feta & Spinach Stuffed Chicken

1 bag Birds Eye® Superfood Blends Chickpeas & Spinach

¼ cup crumbled feta cheese

2 Tbsp. thinly sliced almonds

4 boneless chicken breast halves, pounded thin


  1. Cook Superfood Blends according to package directions; stir in cheese and almonds. Let cool slightly.
  2. Place Superfood Blends mixture in center of each breast and carefully roll up. Secure with toothpicks.
  3. Heat oil over medium high heat in nonstick skillet and place chicken in pan seam-side down. Cook, browning on all sides, 15 minutes or until chicken is thoroughly cooked.
  4. Let rest 2 minutes before serving.
