Quinoa & Spinach Crustless Quiches

10 min prep 15 min cook 25 min total 6 to 8 muffin size quiches servings


1 bag Birds Eye® Superfood Blends Quinoa & Spinach, cooked

according to package directions and cooled

5 eggs

1-1/2 cups shredded cheddar cheese

¼ tsp. salt

1/8 tsp. ground black pepper


  1. Preheat oven to 350˚F. Lightly grease 6 to 8 muffin cups in a muffin pan. If desired line with paper liners.
  2. In large bowl whisk eggs. Add Superfood Blends, cheese, salt and pepper. Evenly fill muffin pan. (To make 6 quiches, muffin cups will be very full. Place muffin pan on a tray to catch any overflow while baking.)
  3.  Bake 15 to 18 minutes or until egg has set and quiches are golden brown
