Easy Coconut Soup With Black Rice, Mango & Edamame

1 bag Birds Eye® Superfood Blends Black Rice & Edamame, cooked according to package directions

1 Tbsp. olive oil

¼ cup thinly sliced onion

1 can (13.5 oz.) coconut milk, regular or lite

2 cups vegetable or chicken broth

1 lime, juiced

¼ tsp. ground black pepper


  1. Heat oil over medium heat in medium saucepan and cook onion, stirring occasionally, 4 minutes or until softened.
  2. Stir in coconut milk and broth. Bring to a boil over high heat. Reduce heat to low and simmer 5 minutes. Add lime juice and season with pepper.
  3. Serve in bowls topped with Superfood Blends.
